Summer entertaining can feel a bit same-same– the grazing board comes out, someone brings chips, someone else brings dip, and before you know it, the table looks exactly like the last ten events. So why not shake things up with something that still feels easy, but also feels like you put a little thought into it? This recipe is perfect for that. Most of the elements can be prepped in advance: the mango salad can chill happily in the fridge, the avocado mixture holds beautifully with a little citrus, and the tortilla cups can be made hours ahead. When your guests start to trickle in, all you need to do is assemble and serve. It’s that kind of breezy hosting that makes you look like you’ve got everything under control-even if the rest of the kitchen is chaos. (We’ve all been there.) Avocado & Mango Salad Tortilla Cups (Serves 12 Prep 20 Mins) You Will Need: Let’s start with the base: Turmeric & Black Pepper Tortillas.I have chosen turmeric & black pepper wraps for the colour mainly but any wrap is fine, obviously the colour can really enhance the look of the appetiser. They bring this gorgeous golden colour to the whole dish and just a tiny hint of warmth from the pepper. They look impressive without you having to do anything fancy, which is a win to start with. If you are unable to find similar, spinach wraps or sweet potato wraps would be great too. A quick spritz of spray olive oil is all you need to help them crisp up lightly – no heavy frying, just enough to give them a little texture. For the Creamy Avocado This is that cool, herby, creamy layer that ties everything together. You’ll want a nice firm but ripe avocado because it gives you that buttery texture. A spoonful of Greek yoghurt helps loosen it all up while keeping things light, tangy and fresh.A little garlic adds flavour without being too punchy, and then we’re adding herbs – fresh coriander for brightness and fresh dill for that soft, sweet freshness that makes the avocado taste even greener (in a good way). Coriander would be a nice option too.Finish it with a pinch of sea salt, just enough to wake everything up. For the Mango Salad This is where all the summer vibes come in. Sweet, juicy mango is the star here, and it gets lifted by the tiniest bit of finely sliced kaffir lime leaf, which adds this beautiful floral-citrus aroma making the salad taste way more complex than it is.A sprinkle of semi-dried chilli flakes brings a subtle smoky heat that works so well with the mango’s sweetness.Then you’ll squeeze in some lime juice and grate in a bit of lime zest to keep the whole thing bright and zingy (plus a little extra zest for the garnish).And if you like a little extra kick, a dusting of ground chilli flakes on top makes it look pretty and gives it a touch more heat. Instructions: Preheat the oven to 160°C. Using a flower-shaped cookie cutter, cut 12 tortilla flowers from the tortillas. Gently press each one into the holes of a mini muffin tray to form small cups. Lightly spray with olive oil. Bake for about 12 minutes, or until crisp and lightly golden. Transfer to a wire rack to cool completely. In the bowl of a mini food processor, add the avocado, yoghurt, coriander, dill, garlic, and salt. Blitz until smooth, creamy, and well combined. Finely dice the mango and place it in a small bowl. Add the shredded kaffir lime leaf, chilli flakes, lime juice, and lime zest. Stir gently to combine. Fit a piping bag with a decorative nozzle and fill it with the creamy avocado mixture. Pipe the avocado filling into the centre of each tortilla flower cup. Spoon a teaspoon of the mango salad on top of each filled cup. Garnish with a pinch of finely ground chilli flakes & hey…Bob’s your uncle! Serve & Enjoy! FREE Recipe Card MORE Recipes ‘rustic…charming…feel extravagant’ Helpful Hints: You are not locked into finding turmeric & black pepper wraps, beetroot ones or sweet potato or even spinach wraps would be just effective. Try to use a contrasting colour though. I tend to stay away from your usual boring old plain variety wraps to make the presentation a little more interesting. Like with pastry bases, it is best to not fill them until you are ready to serve as you want to avoid the final product being soggy, falling apart & being messy to eat. These bases keep in an airtight container for 2-3 days, so you can prepare them ahead of time & then fill them when ready to use them. You can use just a plain round cookie cutter instead of a floral one, if that is what you have on hand and then use a fancy piping tip to pipe in the avocado. It really comes down to how you want to present this warm-weather appetiser. If you don’t particularly like mango, you can easily substitute this for strawberry, blueberry, cherry or nectarine in these fresh & elegant bites. Play around with flavours but there are numerous options here.
