Chilli Rice Crackers With Avocado & Finger Lime Caviar July 28, 2025July 28, 2025 Facebook15TweetPin11Email One Bite Appetisers: Entertaining doesn’t have to be bigger than Ben Hur, in fact, some of the most enjoyable get-togethers I’ve hosted have been the most relaxed- no extravagant spreads, no marathon cooking sessions, just a few one bite snacks, good wine, and people I enjoy being around. That being said though, I do so enjoy going that extra mile and being the hostess with the mostess But the truth is, you don’t need to go over the top to impress. Often, it’s the simple one bite appetisers, done with a little care and attention, that make guests feel like they’re loved and appreciated. And let’s be honest, who doesn’t love a good snack with a little flair? Take an everyday snack like these chilli rice crackers, for example. They’re small, punchy, and full of flavour & great all on their own- spicy, crisp, and perfectly moreish. But instead of serving them in a bowl with a store-bought dip on the side (we’ve all done it!), I’ve used them as the base for a quick & clever canapé. It only takes a few minutes to transform these one bite crackers into something that feels a little more curated. I top each crispy cracker with a generous dollop of creamy avocado dip, made with newly ripe avocado, a little green chilli, plenty of fresh herbs, a hit of lemon or lime juice, and a pinch of salt & a sneaky little hint of garlic. The result is cool and fresh- just the right contrast to the heat of the cracker but the avocado just quietens down the spice a little (for those that don’t like spice). To finish things off, I add a little spoonful of citrus caviar (the glistening pearls from finger limes). These one bite canapés are not just pretty- they burst in your mouth with tangy brightness, bringing a fresh lift to the rich avocado and spicy base. Finger lime flesh comes in different colours as well…perhaps an undervalued ingredient? It’s a tiny garnish, but it completely transforms these one bite appetisers into something unexpected & stylish. Simple canapés like these, people remember- not because they’re complicated, but because they are very simply embellished & anyone can do it. Food like this naturally draws people in…breaks the ice…gets them curious and engaged. And as a host, that’s such a win- especially when it takes barely any time to pull together. I love these kinds of one bite snacks for bigger events too. They hold well on a platter, look colourful and vibrant, and don’t require any last-minute fuss and you can make a ton of them to go around to fill the gaps. You can even prep the components ahead of time- make the dip, scoop out the finger lime, then just lay out your crackers and assemble them right before guests arrive. So if you’re feeling the pressure to create something grand for your next gathering, take a breath & consider light bites like these. One bite appetisers don’t have to be extreme. Start with a humble ingredient like a rice cracker- and think of how you can build on it with texture, colour, and flavour. A little creamy dip, a citrus pop, and a spicy crunch- and suddenly, you’ve got an appetiser that feels thoughtful, modern, and completely crowd-pleasing. Keep it simple. Keep it punchy. Let your appetisers do the talking- one tiny bite at a time. Chilli Rice Crackers With Avocado & Finger Lime Caviar (Serves 25 Prep 30 Mins) You Will Need: Avocado I use a barely ripe avocado with its creamy flesh and a mild, buttery flavour. It is a personal thing. I don’t like fruit or veges that are fully ripe. Obviously it needs to have a bit of give to blend but just make sure its still firm. Avocado forms the base of the dip, & even though its rich, the flavour is mild but the other elements give it a boost. Greek Yoghurt Thick and tangy, Greek yoghurt brings a lightness and subtle tang to balance the richness of the avocado. It also helps the mixture hold its shape when piped onto crackers. Lemon Juice Freshly squeezed lemon juice brightens the entire dip, adding acidity and freshness. It also helps preserve the vibrant green colour of the avocado. Lime juice is another option but since there is finger lime on top, I havve used lemon juice in the dip. Parsley Any parsley is fine, I use flat-leaf & it adds clean, herbaceous notes and a touch of earthiness to the mix. It’s a fresh counterpoint to the richness of the other ingredients. Dill Fresh dill brings a bright, slightly grassy flavour with subtle notes of anise. It adds a fragrant lift to the avocado dip and works beautifully as a garnish, offering both visual appeal with it’s feathery appearance and a fresh, herbaceous contrast. Use the soft fronds rather than the thicker stems for the best flavour and presentation. Green Chilli A small amount of fresh green chilli adds a gentle heat and a lively kick to the mix. A different heat to the crackers…It enhances the flavour without overpowering the other ingredients. You can leave this bit out if you don’t want any more spice but 1/2 a chilli won’t be particularly hot. Baby Spinach A small handful of baby spinach helps boost the colour and adds a very subtle earthiness. Garlic Just a single clove is enough to add depth and savoury warmth. Raw garlic can pack a punch, so use it sparingly to enhance without overpowering. Although I am often heavy- handed with garlic, I have shown restraint on this occasion, using only 1 medium-sized clove. Olive Oil A drizzle of good-quality olive oil brings everything together, adding smoothness and a subtle peppery note. It also helps the dip emulsify to a creamy, pipeable consistency. I use garlic- infused olive oil. Salt A pinch of sea salt flakes it generally enough but you can titrate it to your taste. Chilli Rice Crackers I just bought a bag of chilli rice crackers at a Brisbane food market (Harris Farm). I have seen them in Asian supermarkets and at IGA too. There would have been over 100 crackers in a pack & I only used around 1/4 of the pack, so there are plenty to use another time. Or…you could double your recipe if you are serving alot of hungry mouths. Instructions: Make the Avocado Dip Start by preparing your ingredients so everything is ready to go. Scoop the avocado flesh into the clean bowl of a small food processor, followed by the yoghurt, freshly squeezed lemon juice, salt, your choice of soft herbs (like parsley, dill, coriander, or chives), baby spinach leaves, a drizzle of olive oil, just a clove (or 2) of garlic & 1/2 a green chilli for a subtle kick.Blend the ingredients until the mixture becomes smooth and creamy, with a pretty green colour. You may need to stop and scrape down the sides once or twice to ensure everything is well incorporated. Give it a quick taste and adjust with a little more lemon juice, salt, or garlic if you like. Set aside while you prepare the crackers. Pipe the Dip Lay out 25 chilli rice crackers on a large serving board or platter. Space them evenly to allow for easy piping and to keep the presentation clean. Fit a piping bag with a round nozzle (or a star tip if you’d like a bit more texture) and fill it with the avocado dip.Carefully pipe a generous swirl of the dip into the centre of each cracker, building it up slightly into a soft mound. This not only looks inviting but gives enough height to cradle the garnishes. Garnish Using a small spoon (or tweezers), gently place a few finger lime pearls on top of each piped swirl, letting them nestle into the dip. A teaspoon is fine. Finish each canapé with a tiny sprig of fresh dill.You can chill for up to 30 minutes before serving to keep the crackers crisp. Serve & Enjoy! FREE Recipe Card MORE Recipes ‘a burst of bright tanginess’ Helpful Hints: This type of one bite appetiser really is best eaten same day to keep the freshness & although these crackers don’t go soggy when kept in an airtight container in the fridge overnight, they do soften & lose their crunch. If Chilli flavours are not your thing, you can do the sme thing with any small rice cracker. I was drawn to the flavour & colour contrast with these one bite snacks. Change up your herbs as you like. Coriander & mint would be a nice substitute in the avocado too. I chose to make 25 but you may make more or less, depending on the size of your rice crackers and how generous you are with your dollop of avocado dip. But this is a great snack to feed a crowd on. I only used about 1/4 pack of rice crackers, so if you are doubling up, it is pretty simple to do but obviously you will need to factor in the extra time for assembly. FREE Recipe Card Chilli Rice Crackers With Avocado & Finger Lime Caviar Recipe (Serves 25 Prep 30 Mins) Ingredients ½ Avocado 1 Tbsp Greek Yoghurt Juice of ½ Lemon 1 Tbsp Parsley 1 Tbsp Dill Small handful of Baby Spinach ½ Green chilli 1 medium-sized Clove of Garlic 1 Tbsp Olive Oil 1 tsp Sea salt 25 Chilli Rice Crackers Method In a small food processor, blend the avocado, yoghurt, lemon juice, garlic, herbs, spinach, salt, olive oil, and green chilli until smooth and creamy. Arrange 25 chilli rice crackers on a serving platter. Fill a piping bag fitted with a round piping tip with the avocado mixture and pipe a swirl onto each cracker. Top with finger lime pearls and a small sprig of fresh dill to garnish. Serve & Enjoy! Bright acidity cuts through the creaminess of the avocado Citrus and herbal notes complement the lemon, dill, and parsley Crisp and refreshing alongside the chilli heat Vermentino Light-bodied with a slightly saline edge, Vermentino has citrus peel, almond, and herbaceous notes that pair beautifully with the fresh, creamy, and slightly spicy elements. Refreshing and bright Mediterranean herbs align well with dill and parsley Versatile and food-friendly Sparkling Wine (Brut or Extra Brut) A dry sparkling wine, like a Brut Champagne or Australian sparkling, offers acidity, lift, and texture. The bubbles cleanse the palate between bites.
