Seeded Crackers With Whipped Brie & Prosciutto June 23, 2025July 8, 2025 Facebook3TweetPinEmail Red Carpet Crackers & Cheese: Let’s be honest- Cheese & crackers are the undisputed heroes of any grazing table & it’s no different when hosting a canapé party. They’re crowd-pleasers, low effort, and always the first to disappear. But here’s the thing: it doesn’t take much to turn these everyday seeded party staples into something worthy of a cocktail soirée. All you need is a crispy cracker base- pick your favourite. Whether it’s a black sesame crisp, sourdough wafer, or a classic multigrain number, the right base gives you a good crunch and a flavour that plays well with others. Now for the cheese…Triple Brie is my go-to here. It’s indulgent, buttery, and behaves beautifully when whipped. A little trick I love? Blend it with a splash of Greek yoghurt, a swirl of olive oil, a touch of garlic, and a few soft herbs like dill or chives. It turns that already-luxurious Brie into a silky, spreadable cloud that feels far fancier than the effort it takes. Top each cracker with a generous dollop of this whipped Brie, then crown it with a soft fold of Prosciutto (Italian cured ham) or Serrano (Spanish cured ham). Garnish- micro herbs, red chilli flakes, dried cranberry, nuts- take your pick…That’s it! No need for bells and whistles– just quality ingredients layered with care & a colourful flourish with your garnish. And just like that, your humble crackers and cheese are red carpet worthy & ready for any canapé party. These little cocktail bites are no longer just nibbles- they’re canapé royalty, ready for your next festive gathering, garden party, or even a sneaky solo moment with a glass of bubbles. Backyard wedding event? No problem… Simple. Elegant. Stylish Hors d’oeuvres. Enjoy! Seeded Crackers With Whipped Brie & Prosciutto (Serves 20 Prep 30 Mins) You Will Need: Arnott’s Seeded Crackers: There are many options here but the Arnott’s seeded cracker I chose for a crisp, savoury base with plenty of crunch and texture. These are sturdy enough to hold whipped toppings and offer a lovely blend of seeds that add both visual appeal and flavour. You don’t want a cracker that will go soggy once the whipped Brie is on top. Brie: Brie is one of my favourites…still! Choose a creamy, full-flavoured Brie (Double or Triple Cream if possible) for a rich and velvety base. Slice off and discard the rind before blending to keep the texture smooth. Greek Yoghurt: Full-fat Greek yoghurt adds a slight tang and helps lighten the whipped Brie mixture. It also gives the filling a beautifully smooth & creamy consistency. Olive Oil: A drizzle of good quality extra virgin olive oil adds depth and richness, helping everything blend together effortlessly. I use Garlic Olive oil (addicted!) which is Olive oil that has been infused with garlic & leaves a beautiful subtle garlicky aftertaste & of course adds a little more depth of flavour. Garlic Cloves: Just a couple of cloves, adds that famous savoury note that cuts through the creaminess without overpowering. Flat Leaf Parsley: Parsley brings brightness, freshness and a gentle herbaceous flavour. That being said, use whatever fresh herbs you have on hand- coriander, basil, chives, sage or dill would all work. Prosciutto: Thinly sliced and dry-cured pork. It is savoury and salty & perfect for shaping into little rose-style toppers. Now sometimes, I find that the Serrano ham (Spanish cured ham) that is available in the supermarkets is often softer than the prosciutto which, by rights should be the other way round, due to the curing process/ time. So just choose whichever is softer as you want to be able to easily roll the roses without it being too dry & hard to manage. Micro Herbs (Garnish): Use delicate sprigs of micro Broccoli, parsley, basil, coriander, or your favourite mix. These look so dainty & add a fresh, refined finish, elevating the presentation. Everything Bagel Seasoning (Garnish): Everything bagel is an awesome creation- a crunchy, savoury blend of sesame seeds, garlic, onion, and poppy seeds. A little sprinkle goes a long way in adding texture and extra flavour. Chilli Flakes (Garnish): Optional, but a light dusting adds a gentle warmth and contrast to the creamy Brie and savoury ham. But the benefit is twofold as the colour adds to presentation also. You don’t have to be a lover of spicy, but a little chilli can really elevate the flavour nicely. Instructions: Remove the Rind of The Brie: Carefully slice away and discard the outer rind of the Brie. This will help the mixture whip up smoothly without any unwanted texture. Whip The Brie: Add the Brie to a small food processor, along with the Greek yoghurt, garlic, olive oil, and fresh parsley. Blend until the mixture is creamy, silky, and well combined, scraping down the sides as needed to ensure everything is evenly mixed. If the mixture is too runny, add a little extra Brie. Otherwise start with 1 Tbsp of Greek Yoghurt, you can always add more if it needs to be thinner. Pipe The Brie: Once the Brie is whipped, arrange your Arnott’s Seeded Crackers on a platter or serving board, leaving a little space between each for easy piping and garnishing. Spoon the cheese mixture into a piping bag fitted with your favourite nozzle (a round or open star tip works beautifully). Pipe a generous swirl into the centre of each cracker. Make The Prosciutto Roses: Next, take a slice of Prosciutto and slice it in half lengthways. Fold each strip in half again lengthways. Starting from one end, gently roll the strip into a rose shape…no need for perfection here, just aim for a soft, layered look. Place a ham rose on top of each piped Brie cracker, positioning the folded edge upright so it mimics delicate petals. Garnish: Finish each bite with a few micro herbs for freshness and colour. Add a light sprinkle of Everything Bagel seasoning for crunch and savoury contrast, then top with a tiny pinch of chilli flakes if you’d like a subtle kick. FREE Recipe Card MORE Recipes ‘red carpet worthy’ Helpful Hints: There are a million different cracker bases you could use, but I would choose something thicker & crunchier to hold its form & not go soggy while sitting on the plate. Seeded crackers are ideal for this recipe. Wafers, water crackers or lavosh would not be my choice. I often use Serrano ham as the produce available to me it is softer and easier to roll & fold. You can use Prosciutto but it is a coarser texture and may be harder to work with. That being said, it should be the opposite, ie the prosciutto by rights should be softer. Just make sure you choose a soft variety of either for best results. When hosting a canapé party, sometimes it as simple as “zhuzhing up” a basic snack like cheese & crackers & the garnish plays a big part in that. FREE Recipe Card Seeded Crackers With Whipped Brie & Prosciutto Recipe (Serves 20 Prep 30 Mins) Ingredients 100g Arnotts Seeded Crackers 100g Triple Brie 2 Tbsp Greek Yoghurt 1 Tbsp Garlic Olive Oil 2 Garlic Cloves 1-2 Tbsp Flat Leaf Parsley 100g Prosciutto Micro herbs (Garnish) Everything Bagel (Garnish) Chilli Flakes (Garnish) Method Slice away and discard the outer rind of the Brie. In a small food processor, combine the Brie, yoghurt, garlic, olive oil, and herbs. Blend until smooth and creamy. Arrange the crackers on a serving plate. Fit a piping bag with your preferred tip and fill it with the whipped Brie mixture. Pipe a generous dollop into the centre of each cracker. Take a slice of Prosciutto, slice it in half lengthways, then fold each strip in half lengthways again. Roll it up to create a little rose. Place a Prosciutto rose on top of each cracker, with the folded edge facing up for a smarter finish. Garnish each one with a few micro herbs, a sprinkle of Everything Bagel seasoning, and a pinch of chilli flakes. Serve & Enjoy! FREE Recipe Card ‘cheese & crackers…undisputed heroes’ Wine Pairing Suggestions: Any canapé party deserves a good wine pairing to enhance the stylish hors d’oeuvres. Here are some options: Sparkling Wine: Brut Champagne or Cava The bubbles and crisp acidity of a sparkling wine cut through the richness of the Brie and ham beautifully, while the toasty notes in Champagne or Cava complement the savoury crackers and seasoning. Try: A Brut Champagne, quality Cava, or a dry Australian sparkling (Chardonnay/Pinot Noir blend works well). Sauvignon Blanc Sauvignon Blanc has a bright acidity and herbaceous notes highlight the fresh parsley and micro herbs, while cleansing the palate between bites. Try: A New Zealand Sauvignon Blanc or one from Adelaide Hills for zing and freshness. Dry Rosé A dry rosé has just enough body to stand up to the salty Prosciutto, with fruity and floral notes that balance the creamy Brie. Try: A Provence-style Rosé or something from McLaren Vale with a crisp finish. Chardonnay (Unoaked or Lightly Oaked) A creamy Brie pairs naturally with Chardonnay. Unoaked versions bring fresh citrus and minerality, while lightly oaked ones offer a soft, buttery note that matches the richness without overwhelming the herbs or garlic. Try: Chablis (France), Margaret River Chardonnay, or Sonoma Coast (USA). Vermentino or Grüner Veltliner (for something a bit different) These varieties offer a slightly saline, crisp profile with subtle herbal or white pepper notes that echo the herbs and garlic in the topping. Try: Vermentino from Sardinia or McLaren Vale; Austrian Grüner Veltliner.
