High Tea Mini Dessert:

Because croissants aren’t just for ham and cheese…they are ideal for that sweet savoury dessert (high tea mini dessert) appetiser too.

Croissants are often thought of as a savoury indulgence– and I do love them that way too, but they’re just as fabulous with something sweet inside.

Their golden, flaky layers make the perfect base for dessert-style fillings, especially when you’re after something that feels a little bit fancy but still incredibly easy to pull together.

This high tea mini dessert doesn’t take much to dress up, so perfect when you are pushed for time & looking for something sweet & easy.

Buy ready-made mini croissants & embellish them!

I fill them with a light passionfruit cream- tangy, creamy, and just the right amount of tropical, and then finish them with a light drizzle of melted white chocolate.

That little bit of sweetness balances beautifully with the tartness of the fruit and the richness of the pastry.

They’re always one of the first things to go when I put them out.

Kids absolutely love them (no surprise there), but I’ve noticed the adults circle back for seconds too.

There’s something about the mix of textures, the crisp pastry, soft silky filling, and that sweet chocolate finish, that keeps everyone coming back for another.

Reasons to love this mini croissant dessert:

  • The mini size makes them perfect for dessert platters, high teas, afternoon teas, or as a playful little canapé-style treat at parties.
  • You can make the cream ahead of time and assemble them just before serving. Super practical if you’re entertaining.
  • They’re beautiful on a platter, especially if you add a scattering of freeze-dried raspberry, a drizzle of passionfruit, mint leaves, some edible flowers, or a dusting of icing sugar.

I love how these little croissants bring a bit of surprise to the table.

People often associate croissants with savoury, but get something light, bright, and sweet instead.

Perfect for any dining event where you want something that feels a bit special, but doesn’t take all day to make.

It is in fact possible to put together easy canapés and appetisers that look appealing, without breaking a sweat…or the bank.

Passionfruit White Chocolate Mini Croissants

(Serves 8 Prep 20 Mins)

You Will Need:

Mini Croissants
Look for mini croissants with a golden, flaky crust and buttery layers. You can often find them in the bakery section of supermarkets, or at local bakeries. Choose ones that are fresh and not overly crisp, so they’re easy to fill without crumbling. If you’re feeling ambitious, you could even bake your own or use mini croissant dough from the freezer section and bake them fresh. I purchased mine from Coles, in the bakery section & although they were a pack of 8, I ended up with a bag of 9- winning!! If you wanted to make your own though, they are easy enough to do using ready-made pastry.

Full-Fat Cream
Go for thickened full-fat cream (also labelled as whipping cream). It whips up beautifully and gives the passionfruit filling that smooth, rich texture we want. The extra fat content helps it hold its shape-especially important when piping into pastry.

Passionfruit Curd
Tangy, fruity, and silky-smooth, passionfruit curd brings a tropical brightness to the cream filling. You can use store-bought curd for ease, or make your own if you have a stash of fresh passionfruit. The curd adds depth of flavour and a gorgeous golden hue to the filling, plus a little tartness to your flavour profile. I have to admit, I am a bit partial to that tart flavour.

White Chocolate Melts
These are perfect for melting and drizzling- smooth, creamy, and easy to work with. You can also use a good-quality white chocolate bar, chopped finely. Once melted, a quick drizzle over the croissants adds sweetness and a lovely visual finish.

Fresh Passionfruit
A spoonful or two of fresh passionfruit pulp brings a burst of real fruit flavour to the top of each mini croissant. The seeds add a little texture and visual interest too. This is optional, but it lifts the overall dessert and reinforces the passionfruit notes beautifully. You could also add some fresh passionfruit to the cream mixture.

Freeze-Dried Raspberries
Love Love Love these little ruby gems. They add a gorgeous pop of colour, a touch of tartness, and a lovely crunch. Crush them lightly and sprinkle over the white chocolate while it’s still slightly soft so they stick. Not only do they make everything look gorgeous, but they also balance out the sweetness with a bit of tang. I love to use these as a garnish on alot of my dessert type recipes- mainly for the colour contrast.

Instructions:

Slice the Croissants:

Carefully slice along the inner curve of each croissant to create a pocket for the filling, being mindful not to cut all the way through. You want to create a natural hinge so the croissant holds its shape once filled.

Prepare the Passionfruit Cream:

In a small mixing bowl, pour in the cream and using a hand mixer, whip it until stiff peaks form—when you lift the beaters, the cream should stand tall without collapsing. Add the passionfruit curd and beat again briefly, just until the mixture is smooth and evenly combined. Be careful not to overmix; the goal is to keep the texture light, airy, and luscious.

Pipe The Cream:

Transfer the passionfruit cream to a piping bag fitted with your favourite piping tip—an open star or round nozzle works beautifully. Gently pipe the filling into each croissant, starting from one end and moving towards the other, allowing the cream to naturally fill the folds of the pastry.

Melt The Chocolate:

Place the white chocolate melts into a microwave-safe bowl and heat for 1 minute on medium power. Give it a good stir, then continue microwaving in 30-second bursts, stirring in between, until the chocolate is completely melted and silky smooth. If needed, add a tiny splash of neutral oil to help with drizzling consistency.

Drizzle The Chocolate:

Using a spoon or piping bag with a fine tip, drizzle the melted white chocolate over the filled croissants in a decorative zigzag pattern. Let some drizzle over the edges for a more indulgent finish.

Garnish:

Just before serving, spoon a little fresh passionfruit pulp over each croissant, letting the seeds peek through for texture and visual appeal. Finish with a delicate sprinkle of freeze-dried raspberry for a pop of colour and a tangy contrast that cuts through the sweetness.

‘circle back for seconds’

Mini Croissant Dessert

Helpful Hints:

  • I bought my croissants from Coles & they came in a bag of 8, although someone couldn’t count & I was lucky to get 9 😉 Feel free to double the recipe to make more.

  • If the croissants are a little firm, heat them in the microwave for 30 seconds to soften them up.

  • You could substitute the passionfruit with lemon curd or make a Nutella cream & drizzle with dark chocolate. Sometimes it is nice to make 2 flavours so there are options.

  • You could also dust the croissants with icing sugar at the end to elevate them further and add a little more sweetness. Admittedly, I tend to lean more toward tart flavours myself, but the icing sugar can appeal to the sweet tooth.

  • This high tea mini dessert is ok to refrigerate overnight. I wouldn’t keep them any longer but after 1 night, they still taste good, the next day. I would store them in an airtight container though.

  • Pack of 8 Mini Croissants
  • 150ml Full-fat Cream
  • Passionfruit curd
  • 100g White Chocolate melts
  • 1 Fresh Passionfruit
  • 2 Tbsp Freeze-dried Raspberries crushed

Method

  1. Carefully slice along the inner curve of each croissant, creating an opening without cutting all the way through.
  2. In a small bowl, use a hand mixer whip the cream until stiff peaks form. Add the passionfruit curd and beat briefly until just combined- you want it light and airy.
  3. Spoon the mixture into a piping bag fitted with your favourite piping tip, then pipe the passionfruit cream into the croissants, starting from one end and working your way through.
  4. Place the white chocolate melts in a microwave-safe bowl and heat for 1 minute. Stir, then continue heating in 30-second bursts, stirring in between, until smooth and runny.
  5. Drizzle the melted chocolate over the filled croissants in a zigzag motion.
  6. To finish, garnish with fresh passionfruit pulp and a sprinkle of freeze-dried raspberry.

Wine Pairing Suggestions:

Sparkling

Moscato d’Asti (Italy)
Lightly sparkling, low in alcohol, and naturally sweet, Moscato d’Asti is a lovely match for passionfruit and white chocolate. Its floral notes and gentle fizz enhance the dessert’s texture without overpowering it.

Sparkling Rosé
A dry sparkling rosé adds a touch of red berry brightness and balances the sweetness of this high tea mini dessert, especially if garnished with freeze-dried raspberries. Look for one with subtle citrus and strawberry notes.

Still Whites

Late Harvest Riesling
This style of Riesling offers honeyed sweetness, citrus, and stone fruit notes that mirror the passionfruit and mellow the richness of the cream. The acidity keeps the palate refreshed.

Viognier
For something more floral and lush but not overly sweet, a Viognier with tropical fruit undertones and low oak will complement both the passionfruit and the creamy filling nicely.

Fortified/Dessert Wines

Sauternes
This dessert wine offers deep complexity with apricot, citrus peel, and honey- beautiful with white chocolate and tart tropical fruit.

Australian Muscat (Rutherglen style)
If you’re after a bold, rich match, a chilled glass of this amber-hued, raisiny sweet Muscat wine creates a lovely contrast with the zesty freshness of the passionfruit.
