Spicy margarita jelly shots served in lime or orange halves, cleverly cut into colourful, juicy-looking segments & disguised as Watermelon flavour.

These little gems aren’t just a fun treat—they’re also a fantastic conversation starter.

For a bold twist, I’ve given the classic margarita a spicy makeover.

These jalapeño margarita jelly shots are disguised as watermelon segments, mainly as I love the vivid green colour & contrasting pink.

In fact, they are spicy jalapeño margaritas & they taste like a fiesta in your mouth!

The vibrant presentation and unexpected flavours are sure to surprise and entrance your guests.

It’s the perfect way to mess with their heads (in the best way possible) while also creating a memorable party moment.

How to make Jalapeño Margarita Jelly Shots

Here’s a quick overview:

  1. Prepare the “Rinds”: Halve limes or oranges and scoop out the pulp, leaving behind sturdy, clean shells.
  2. Mix the Jelly: Combine tequila, lime juice, a splash of orange liqueur, and a hint of jalapeño with unflavoured gelatine. Add food colouring to mimic watermelon if you want that ‘wow’ factor.
  3. Set and Slice: Pour the mixture into the fruit halves and let it set. Once firm, slice into neat wedges for serving.
  4. Garnish: well that bit is up to you!

Spicy Margarita Jelly Shots

(Serves 12 Prep 10 Mins + Refrigerate 4 hrs)

You Will Need:

Limes: The brighter the green the better & medium size is good.

Tequila: Tequila is the base spirit for a margarita. You could make a watermelon margarita so that what you are seeing matches the taste but as a non-lover of watermelon, I have chosen a contrasting flavour.

Cointreau: Cointreau is the other spirit used in a margarita which can be substituted with triple sec but I personally, prefer the flavour in the cointreau.

Jalepeno: I enjoy a little heat and I suppose over the years my taste has developed so I do like a bit of an afterburn. You can eliminate the Jalapeño if it’s not your thing.

Mulberry Food Colouring: I have used a gel food colouring and I have used a couple of drops of Mulberry food colouring which gives a fairly bright pink colour. You could use a different pink to more accurately depict watermelon.

Water: The water is for soaking the gelatine leaves. Alternatively you could use gelatine powder.

Gelatine Leaves: These come in a pack of 5 in the baking section of the supermarket.

Black Sesame Seeds: Watermelon generally has seeds throughout. I have used black sesame seeds. The other option would be white sesame seeds.

Instructions:

Prepare the Limes:

  • Take a sharp knife and carefully slice the limes in half lengthwise.
  • Use a lemon/lime juicer to squeeze the lime juice out and reserve.
  • Using the tip of your knife, run it around the edge of the lime flesh, just inside the skin, to loosen it. Be gentle to avoid cutting through the lime rind.
  • With a teaspoon, scoop out the lime flesh. Rotate the spoon along the inside edge for a clean and smooth interior. This step ensures an even, tidy look for your lime “cups.”
  • Place the hollowed lime halves into the cups of a muffin pan. This keeps them upright and prevents spillage during filling and setting.

Make the Cocktail Mixture:

  • In a mixing bowl or a large measuring jug, combine tequila, Cointreau, freshly squeezed lime juice, and muddled jalapeño. The jalapeño adds a spicy kick, so adjust the quantity based on your own preference.
  • If you want a vibrant colour, add a few drops of food colouring to enhance the visual appeal. Stir the mixture well until fully combined.

Prepare the Gelatine:

  • In a small bowl, pour 100ml of cold water and submerge the gelatine leaves completely. Let them soak for about 10 minutes, which softens the leaves and prepares them for melting.

Dissolve the Gelatine:

  • After soaking, remove the gelatine leaves and gently squeeze out any excess water.
  • Transfer the leaves to a small saucepan and place it over medium heat. Stir continuously until the gelatine fully dissolves into a smooth, liquid consistency. Do not let the mixture boil, as this can affect the gelatine’s setting properties.

Combine and Fill:

  • Pour the melted gelatine into the tequila mixture and stir thoroughly to ensure everything is well combined (This step is crucial for a consistent set).
  • Taste test the margarita mixture & add 2 tsp sugar syrup if required.
  • Carefully pour the cocktail mixture into the prepared lime halves, filling each lime just to the rim for a neat appearance.

Chill and Set:

  • Place the muffin pan in the refrigerator and allow the lime halves to chill for at least 4 hours, or until the jelly is firm and fully set. For best results, refrigerate overnight.

Cut and Serve:

  • Once the jelly is firm, remove the lime halves from the fridge. Using a sharp knife, slice each lime half into smaller wedges. Be gentle to avoid damaging the delicate jelly. Aim for even slices to create neat, cocktail-inspired wedges. Arrange this cocktail jelly appetiser on a platter or decorative plate and garnish with fresh mint or lime zest.

Helpful Hints

  • If you have time, prepare these in advance and refrigerate overnight to ensure they are properly set. If you are short on time then 4 hrs will suffice.

  • If you don’t want the watermelon look, then choose another colour that is contrasting to the citrus you are using.

  • This cocktail jelly appetiser will keep for a couple of days in the fridge.
  • If you don’t enjoy spicy then it’s easy enough to eliminate the jalapeño

Spicy Margarita Jelly Shots

Recipe

(Serves 14 Prep 20 Mins + 4hrs refrigeration)

Ingredients

  • 6 Medium Tahitian Limes
  • 60ml Tequila
  • 30ml Cointreau
  • 1/2 Jalapeño
  • 2 drops Mulberry Food Colouring
  • 100 ml Water
  • 2 Gelatine Leaves
  • Sugar Syrup (optional)
  • Black Sesame Seeds (garnish)

Method

  1. Slice the limes in half lengthwise
  2. Use a hand juicer to extract the lime juice into a small bowl, being careful to keep the lime skins intact
  3. Run a knife around the edge of each lime to loosen the flesh from the skin, then scoop out the flesh with a teaspoon, making sure the inside of the skin is clean and smooth
  4. Place the hollowed lime halves into a muffin pan to keep them stable
  5. In a mixing bowl or measuring jug, combine tequila, Cointreau, lime juice, muddled jalapeño, and food colouring
  6. In a small bowl, add 100ml of cold water and soak the gelatine leaves for 10 minutes
  7. Squeeze out any excess water from the gelatine leaves and transfer them to a small saucepan
  8. Gently heat the gelatine over medium heat, stirring until fully dissolved
  9. Add the melted gelatine to the tequila mixture and stir until everything is well combined
  10. Taste test the mixture & if too tart, add a little simple sugar syrup
  11. Pour the cocktail mixture into the lime halves. Refrigerate for at least 4 hours until set
  12. Once firm, use a sharp knife to cut each jelly-filled lime

‘unexpected flavours’

Wine Pairing Suggestions:

Although margarita shots are alcoholic, there are a few wines that would pair with these to drink after a shot, to complement the flavour rather than clashing with it.

Sparkling Wine

Brut or Extra Brut Prosecco, Cava, or Champagne. The bubbles and high acidity of sparkling wines balance the tanginess of the lime and cut through the tequila’s richness. The crisp, clean finish also works beautifully with the salty rim.

Sauvignon Blanc

This wine’s herbaceous notes and citrusy profile mirror the lime and jalapeño flavours in the margarita, creating balance. A zesty Sauvignon Blanc from New Zealand or Chile would work here.

Reisling Dry or Off-dry

Riesling’s bright acidity and touch of sweetness balance the tangy lime and spicy jalapeño, softening any heat without overwhelming the palate, so a dry or slightly off-dry Riesling from Germany or Australia.

Albariño

A crisp Albariño from Spain or Portugal with its vibrant citrus and mineral qualities align nicely with the margarita’s lime-forward flavour, offering a refreshing contrast.

Rosé

A dry Provencal rosé or a Grenache-based rosé. The subtle berry and citrus notes of rosé complement the margarita’s bright lime and orange flavours, while its light body ensures it won’t overpower the cocktail.

Light-bodied Red (chilled)

A lightly chilled Pinot Noir would add a fruity, slightly earthy contrast to the margarita’s tart and spicy notes, creating an unexpected yet delightful pairing.
