Appetisers and canapés don’t have to be complicated to impress. Sometimes, it’s all about how you present your food.

By rolling up a few simple ingredients, you can create a dish that feels fancy without requiring hours in the kitchen.

The key is to focus on the details—using fresh ingredients, adding a pop of colour, and arranging everything thoughtfully on your board.

What’s Inside these easy roll-ups?

For these easy salami roll-ups, I’ve used a classic combination of salami, cream cheese, olive tapenade, citrus zest, and parsley.

The cream cheese adds a smooth, rich texture that complements the savoury salami, while the olive tapenade brings a burst of umami flavour.

The citrus zest brightens everything up with a bit of tang, and the parsley adds a fresh, herbal note that ties it all together.

But the beauty of these simple salami appetisers is that they’re incredibly versatile. Want to add a bit of heat? Throw in some finely chopped jalapeños or a dash of hot sauce.

Prefer something sweet? A drizzle of honey or a slice of dried fruit could be just the twist you’re looking for.

The possibilities are endless, and that’s what makes these roll-ups so much fun to make—and eat!

Salami Roll-ups on Rice Crackers

(Serves 12 Prep 20 mins + 20 mins in fridge)

You Will Need:

  • Rice Crackers: Any cracker will do, however I have chosen rice crackers as they are simple and complement the rich flavours in your roll-ups.
  • Salami: I have used a salami with medium heat. The salami slices are a medium size (approx 10 cm diameter). These are going to be your outer layer of your roll-up.
  • Cream Cheese: Cream cheese will balance the heat or spice in the salami. It brings the creamy factor.
  • Olive Tapenade: I had some leftover homemade tapenade but you could use store-bought, or you could blend up some mixed olives, herbs, citrus, anchovies, and capers to a coarse texture. This is your salty element (aside from your salami)
  • Lemon Zest: Lemon zest brings a freshness and cuts through the fat from both the cream cheese & the salami.
  • Flat Leaf parsley: In keeping with Mediterranean ingredients, Parsley naturally complements the other flavours & the flat leaf variety will be easier to keep flat & roll.

Instructions:

  1. Prepare Your Work Surface: Start by laying a piece of cling wrap, approximately 30 cm wide, on a clean and flat surface. This will make rolling the salami easier and help keep everything neatly in place.
  2. Arrange the Salami: Begin by placing 3 slices of salami in a horizontal row on the cling wrap, overlapping each slice by about 2 cm. This overlapping helps to create a solid base for your roll-up and ensures the filling won’t spill out later.
  3. Create the Second Row: Directly beneath the first row, arrange another 3 slices of salami, slightly overlapping the first row by about 2 cm. This layering is important for giving the roll its structure.
  4. Add the Third Row: Finally, place a third row of salami in the middle of the first two rows. This central row should overlap the previous rows slightly, forming a sort of “diamond” pattern with the salami slices. This gives you full coverage for your filling.
  5. Spread the Cream Cheese: Using a butter knife or spatula, gently spread an even layer of cream cheese over the salami slices. Make sure to cover all of the salami, but be careful not to overfill. The cream cheese will act as the base to hold the other ingredients in place.
  6. Add the Olive Tapenade: Next, spread the olive tapenade over the cream cheese. The tapenade adds a burst of salty savoury that pairs beautifully with the salami and cream cheese. Again, ensure that it’s evenly distributed without making the layer too thick.
  7. Sprinkle with Lemon Zest: Lightly zest a lemon over the tapenade. The zest adds a refreshing citrusy note that balances the richness of the cheese and the saltiness of the salami and olives. I say be liberal with the zest.
  8. Top with Parsley: Generously cover the entire surface of the salami with flat-leaf parsley. This adds a fresh, herbaceous flavour and a beautiful pop of green colour to the roll-ups. Try to distribute the parsley evenly for the best flavour in each bite.
  9. Roll the Salami: Starting from the front edge of the salami, use the cling wrap to gently lift and roll the salami away from you, pulling the roll tightly as you go. Be firm but careful to keep the filling in place and the salami from tearing. The cling wrap will help you maintain control and create a nice, even roll.
  10. Refrigerate: Once the salami has been rolled into a log, wrap it tightly in the cling wrap and place it in the refrigerator for about 20 minutes. Chilling the roll helps it firm up, making it easier to slice and ensuring the flavours meld together nicely.
  11. Slice and Serve: After the roll has chilled, remove it from the fridge and unwrap the cling wrap. Using a sharp knife, slice the roll into approximately 12 even slices. Each slice should hold its shape and display the layers of salami, cream cheese, tapenade, lemon zest, and parsley. If you are not ready to serve, then place your salami slices in an airtight container in the fridge until you are ready to serve.
  12. Top with Crackers: Finally, place each slice onto a rice or gourmet cracker for a crunchy base. These crackers provide a perfect contrast to the soft filling, adding texture & crunch to each bite.
  13. Enjoy! Your easy salami roll-ups are now ready to serve! Arrange them on a platter, and watch your guests enjoy this tasty, no-fuss appetiser. Simple yet sophisticated, these roll-ups will no doubt be a hit at your next gathering.

Helpful Hints

  • Leave the Salami roll in the fridge for 20 mins to firm up before slicing. This will make your job easier and hold the slices together.

  • These appetisers should be eaten fresh- Don’t top your crackers until you are ready to serve but you could prepare the roll ahead of time and even slice it, then return the slices to the fridge to keep firm.

  • There are many choices for filling but ideally with salami, stick to antipasto/ Mediterranean flavours, sundried tomato, olive, capsicum, eggplant, Parmesan.

  • To make life easy, use the plastic wrap to roll up your salami firmly and keep it wrapped in the fridge until you are ready to slice.

  • Having a cracker for the base makes it a canape by definition. You could choose any cracker or even use toasted bread or pastry for your base.

Recipe

Ingredients

  • 12 Rice Crackers
  • 200 gm (or 18 slices) Salami
  • 100 gm Cream Cheese
  • 2 heaped Tbsp Olive Tapenade
  • Zest of 1 Lemon
  • 1 cup Flat Leaf Parsley leaves

Method

  1. Lay a 30 cm piece of cling wrap on a clean surface.
  2. Arrange 3 overlapping slices of salami in a row.
  3. Add a second overlapping row below, then a third row in the center.
  4. Spread cream cheese evenly over the salami.
  5. Top with olive tapenade, lemon zest, and parsley.
  6. Roll the salami tightly using the cling wrap, then refrigerate for 20 minutes.
  7. Slice the roll into 12 even pieces.
  8. Place each slice on a cracker.

Wine Pairing Suggestions:

When pairing wine with your easy salami roll-ups, you’ll want to balance the rich, salty, and zesty flavours. Here are some wine suggestions that complement these ingredients:

Pinot Grigio: Pinot Grigio’s crisp acidity and light body make it an excellent match for the salty, savoury flavours of the salami and olive tapenade.

The wine’s citrus notes also echo the lemon zest, while its freshness complements the parsley.

NB: Look for an Italian Pinot Grigio for a clean, refreshing pairing that doesn’t overpower the dish.

Rosé Wine: A dry rosé is versatile and pairs well with a variety of foods, making it a great choice for your salami roll-ups.

Its bright acidity cuts through the richness of the cream cheese, while its red fruit flavours enhance the savoury notes of the salami and olive tapenade.

NB: A Provence Rosé or a Spanish Rosado with subtle berry notes and herbal undertones would work beautifully.

Sauvignon Blanc: Sauvignon Blanc’s high acidity and herbaceous character make it a natural partner for the parsley and lemon zest in your roll-ups.

The wine’s crisp, citrusy flavours also balance the creaminess of the cheese and the salty intensity of the tapenade.

NB: A Sauvignon Blanc from New Zealand like Cloudy Bay would be a great choice.

Chianti: For those who prefer red wine, a light to medium-bodied Chianti works well with salami.

It’s bright acidity and cherry notes balance the fattiness of the salami and the richness of the cream cheese.

The wine’s slightly earthy character also pairs nicely with the olive tapenade.

Champagne or Sparkling Wine: The bubbles in Champagne or a good sparkling wine cut through the richness of the cream cheese and salami, while the wine’s acidity complements the lemon zest and parsley. This pairing adds a celebratory feel to your simple salami appetiser.

Vermentino: Vermentino is an aromatic white wine with bright acidity and a slight salinity that pairs well with Mediterranean flavours like olive tapenade and salami.

The wine’s citrus and herbal notes harmonise with the lemon zest and parsley, making it a well-rounded pairing.

Each of these wines has its strengths, and depending on your preference for white, red, or sparkling, you’ll find a perfect match to enhance the flavours of your salami roll-ups.
