Creamy cheesy goodness: The heart of these bites lies in the luscious combination of softened cream cheese, grated cheddar, shredded Parmesan, spring onion and a carefully curated blend of hot curry powder, paprika, garlic powder, and a pinch of salt. Curry cheeseball appetisers Curry Cheeseball Bites (Serves 12 Prep 20 mins) You Will Need: Cream cheese, softened at room temperature to make it easier to mix. Grated cheddar cheese, providing a rich and savoury flavour to the mixture. You want a mixture of cheeses for texture and taste. Shredded Parmesan cheese, adding a nutty and salty undertone to the mix. 1 tablespoon of hot curry powder, infusing the mixture with aromatic and spicy notes. You can of course use a milder curry powder if you prefer. Paprika, adding a subtle smokiness and depth of flavour. Garlic powder, contributing a savoury and pungent taste. I can’t get enough garlic but add to your taste! Salt, to enhance the overall flavour profile. Spring onions, thinly sliced, for a fresh and aromatic touch. Additional spring onion can be reserved for garnish to add a bit of colour. Optionally, Crispy bacon, finely chopped or pre-prepared bacon bits, to add a crispy and savoury element to the mixture. Continental cucumber, each approximately 1 inch thick, serving as the base for the appetiser. Breadsticks, cut into thirds, or alternatively, 12 pretzel sticks, providing a convenient handle to pick the appetiser up or just for a texture contrast- replacing the cracker or bread. Instructions: Begin by bringing the cream cheese to near room temperature, allowing it to soften slightly for easier mixing. In a medium-sized mixing bowl, combine the softened cream cheese with grated cheddar and Parmesan cheese, adding a dash of curry powder, paprika, garlic powder, chopped spring onions, and a pinch of salt. Stir until all ingredients are thoroughly incorporated. Cover the bowl with plastic wrap and refrigerate the mixture for approximately 10 minutes, allowing it to firm up slightly. While the cream cheese mixture chills, prepare the cucumber pieces. Using a melon baller, carefully scoop out the center of each cucumber piece to a depth of approximately 1 centimeter, creating a small cavity. Once the cream cheese mixture has firmed up, use the melon baller to scoop out small balls of the mixture. Roll each ball in bacon bits until coated. Place each cream cheese ball on top of a cucumber piece, nestling it into the cavity created earlier. Using a fine mesh tea strainer, sift a half teaspoon of curry powder evenly over the top of each cream cheese ball, adding a flavourful and colorful garnish. With a sharp knife, carefully make a small slit on the top of each cream cheese ball, allowing room to insert a piece of breadstick into each one, creating a delightful and convenient handle for enjoying the appetiser. To finish, garnish the assembled appetisers with additional chopped spring onions, adding a fresh and vibrant touch. Serve the cream cheese and bacon-stuffed cucumber bites immediately, allowing guests to enjoy the delicious combination of creamy cheese, savoury bacon, and crisp cucumber. Cucumber Cups Curry Cheeseball- Vegetarian option Curry Cheeseball Bites With Bacon Curry Cheeseball Bites (serves 12 Prep 20mins) Recipe Ingredients 125 gm Cream Cheese softened Handful grated Cheddar Cheese 2 Tbsp shredded Parmesan 1 Tbsp hot Curry powder ½ Tsp Paprika ½ tsp Garlic powder Pinch Salt 1/4 Spring Onion thinly sliced + extra to garnish optional 1 slice crisp Bacon finely chopped or finely chopped bacon bits 12 x 1 inch thick slices Continental Cucumber 4 Bread sticks cut into ⅓ or 12 x Pretzel sticks Method Bring cream cheese to near room temperature. In a medium bowl, mix cream cheese with the cheddar, Parmesan, curry powder, paprika, garlic powder, spring onion and salt until combined. Cover with glad wrap and put in fridge until firm (approx 10mins) Use a melon baller to scoop out the centre of the cucumber pieces (approx 1cm deep) Use the melon baller to make balls of the cream cheese mixture, roll in bacon bits & place in the top of each of the cucumber pieces use a tea strainer to sift ½ tsp curry powder on top of each With a sharp knife, make a slit on top of each cheese ball and stick a piece of bread stick in each Garnish with spring onion Serve & enjoy!! FREE Recipe Card ‘play on flavours’ Helpful Tips Once the cream cheese has been brought to room temperature and mixed with the other ingredients, you will need to cover it and put it in the fridge for 10 mins or so, to firm up so you can make into ball shapes with melon baller. I use a hot curry powder but if you prefer a milder flavour, you can use a mild curry powder The bacon is optional but adds a nice crunchy savoury element. Feel free to eliminate it and stick to the vegetarian option. You could use a number of herbs in this- coriander, garlic chives, mint. I have used 1/2 block of cream cheese here but you could potentially double the recipe to make 24. I couldn’t get the usual pretzel sticks for this, so I settled for bread sticks but either work fine. I like the pretzel sticks as they stay crunchy for longer but you could leave them out until you are ready to serve. I haven’t used bacon bits this round but will post photos when I next make them. Melon ballers are a handy little kitchen tool.
