Stuffed Tomato & Spicy Salami Antipasto

You Will Need:

(Serves 20-24 Prep 30 mins)

  • Sliced salami, a key ingredient in antipasto, spicy ideally, providing a savoury and flavourful meat component to the dish.
  • Fresh basil leaves, adding a fragrant and herbaceous element to the appetiser. Basil is a typical Mediterranean herb which perfectly pairs with cheese and Salami.
  • Cherry tomatoes, the larger ones are better to stuff and add a sweetness and juicy factor.
  • Sun-dried tomato dip, offering a rich and tangy base- even better if you make your own. My recipe is here.
  • Baby bocconcini, small balls of fresh mozzarella cheese, adding a creamy and milky texture. The smaller ones are preferred to stuff in the tomatoes.
  • Optionally, balsamic glaze, to drizzle over the finished appetiser, providing a sweet and tangy contrast to the savoury ingredients.

Instructions:

  1. Begin by laying out 3 slices of salami side by side on a clean work surface, ensuring they overlap slightly at the center of each slice.
  2. Gently fold the row of salami slices in half lengthways, creating a long strip of folded salami.
  3. Starting from one end, carefully roll the folded salami slices up tightly to form a rose shape, with the overlapping portion serving as the centre of the rose.
  4. Once the rose shape is formed, stand it up & carefully thread a skewer through the side of the rose, to secure the layers in place.
  5. Prepare the cherry tomatoes by cutting off the tops and using a teaspoon to gently scoop out the seeds, creating a hollow cavity in each tomato.
  6. Spoon approximately 1/4 teaspoon of sun-dried tomato dip into the hollow of each prepared cherry tomato, adding a flavourful base.
  7. Place a baby bocconcini ball into each tomato, ensuring it fits snugly within the hollowed-out cavity.
  8. Thread a fresh basil leaf onto the skewer, adding a fragrant and herbaceous touch to the appetiser.
  9. Carefully thread the skewer through the base of the cherry tomato, ensuring the bocconcini remains in place atop the tomato.
  10. Arrange the assembled salami roses, bocconcini-stuffed cherry tomatoes, and basil leaves on a serving platter, creating an attractive and delicious display.
  11. Serve and enjoy this delicious combination of savoury salami, creamy bocconcini, tangy sun-dried tomato dip, and fresh basil, perfect for any occasion or gathering.
  12. Optionally, you could add some caviar or balsamic pearls in the centre of the salami roses.

Helpful Tips

  • You can use any cold meat but the round slices are best for creating roses.

  • You can make it as mild or spicy as you like.

  • Antipasto is Italian for “first Course” and includes cold meats, marinated & pickled veges, cheeses and crostini and it’s purpose is for stimulating the palate in preparation for the main course.

  • *Cherry tomatoes come in different sizes, try to get the larger ones as the bocconcini ideally should fit inside.

  • *You can use store bought dip if you are short on time.

  • Another option would be to use basil pesto or you can make your own dip/ pesto.

  • Alternatively you can drizzle Balsamic glaze over bocconcini.

  • Bocconcini on it’s own can be really bland so adding the dip, adds another layer of texture & flavour.

  • Other ideas for things to add to your skewers would be, marinated artichokes, olives, stuffed baby peppers, cheese, chargrilled capsicum, marinated eggplant.

  • When catering for a crowd, it’s a good idea to add some super simple menu ideas like this one to save on time but still deliver on flavour.

Stuffed Tomato & Spicy Salami Antipasto

Recipe

(serves 20-24 Prep 30 mins)

Ingredients:

  • 400g Sliced Salami
  • 20-24 Basil leaves
  • 250g Cherry Tomatoes*
  • 150g Sun-dried Tomato dip*
  • 220g Baby bocconcini
  • Optional- Balsamic Glaze

Other:

  • 24 bamboo or wooden skewers

Method

  1. Place 3 Salami slices side by side, overlapping at the centre of each slice
  2. Fold the row of slices in ½ lengthways
  3. Roll the slices up to form a rose shape.
  4. Thread a skewer through the rose starting at the raw end
  5. Cut the tops off the cherry tomatoes and use a tsp to scoop out the seeds
  6. Spoon 1/4 tsp sun-dried tomato dip into the hollow of each tomato
  7. Place a Bocconcini ball into the tomato
  8. Thread a basil leaf onto skewer
  9. Thread the bocconcini tomato from the base of tomato ensuring to hold the bocconcini in place
  10. Serve & enjoy!

Wine Pairing suggestions:

There are a number of options for pairing with my stuffed tomato & spicy salami antipasto:

Chianti Classico: This Italian red wine, specifically Chianti Classico, with its medium to full body, cherry notes, and balanced acidity, complements the savoury salami and enhances the overall Italian-inspired flavours.

Pinot Noir: A light to medium-bodied Pinot Noir with its red fruit flavours (cherry, raspberry) and soft tannins can provide a nice contrast to the spiciness of the salami while letting the other flavours shine.

Sangiovese: Another Italian varietal, Sangiovese, works well with the rich and savoury components of the antipasto. Look for a Sangiovese with moderate tannins and bright acidity.

Rosé: A dry Rosé with its refreshing and crisp profile can be a versatile choice. It complements the flavours of the cherry tomatoes and adds a touch of brightness to the palate.

Prosecco or Sparkling Wine: For a festive touch, consider pairing the antipasto skewers with a chilled Prosecco or any sparkling wine. The effervescence can cut through the richness and enhance the overall experience.
