The key is to focus on the details—using fresh ingredients, adding a pop of colour, and arranging everything thoughtfully on your board.What’s Inside these easy roll-ups?For these easy salami roll-ups, I’ve used a classic combination of salami, cream cheese, olive tapenade, citrus zest, and parsley.The cream cheese adds a smooth, rich texture that complements the savoury salami, while the olive tapenade brings a burst of umami flavour. The citrus zest brightens everything up with a bit of tang, and the parsley adds a fresh, herbal note that ties it all together.But the beauty of these simple salami appetisers is that they’re incredibly versatile. Want to add a bit of heat? Throw in some finely chopped jalapeños or a dash of hot sauce.Prefer something sweet? A drizzle of honey or a slice of dried fruit could be just the twist you’re looking for. Salami: I have used a salami with medium heat. The salami slices are a medium size (approx 10 cm diameter). These are going to be your outer layer of your roll-up. Cream Cheese: Cream cheese will balance the heat or spice in the salami. It brings the creamy factor. Olive Tapenade: I had some leftover homemade tapenade but you could use store-bought, or you could blend up some mixed olives, herbs, citrus, anchovies, and capers to a coarse texture. This is your salty element (aside from your salami) Lemon Zest: Lemon zest brings a freshness and cuts through the fat from both the cream cheese & the salami. Flat Leaf parsley: In keeping with Mediterranean ingredients, Parsley naturally complements the other flavours & the flat leaf variety will be easier to keep flat & roll.Instructions:Prepare Your Work Surface: Start by laying a piece of cling wrap, approximately 30 cm wide, on a clean and flat surface. This will make rolling the salami easier and help keep everything neatly in place. Arrange the Salami: Begin by placing 3 slices of salami in a horizontal row on the cling wrap, overlapping each slice by about 2 cm. This overlapping helps to create a solid base for your roll-up and ensures the filling won’t spill out later. Create the Second Row: Directly beneath the first row, arrange another 3 slices of salami, slightly overlapping the first row by about 2 cm. This layering is important for giving the roll its structure. Add the Third Row: Finally, place a third row of salami in the middle of the first two rows. This central row should overlap the previous rows slightly, forming a sort of “diamond” pattern with the salami slices. This gives you full coverage for your filling. Spread the Cream Cheese: Using a butter knife or spatula, gently spread an even layer of cream cheese over the salami slices. Make sure to cover all of the salami, but be careful not to overfill. The cream cheese will act as the base to hold the other ingredients in place. Add the Olive Tapenade: Next, spread the olive tapenade over the cream cheese. The tapenade adds a burst of salty savoury that pairs beautifully with the salami and cream cheese. Again, ensure that it’s evenly distributed without making the layer too thick. Sprinkle with Lemon Zest: Lightly zest a lemon over the tapenade. The zest adds a refreshing citrusy note that balances the richness of the cheese and the saltiness of the salami and olives. I say be liberal with the zest. Top with Parsley: Generously cover the entire surface of the salami with flat-leaf parsley. This adds a fresh, herbaceous flavour and a beautiful pop of green colour to the roll-ups. Try to distribute the parsley evenly for the best flavour in each bite. Roll the Salami: Starting from the front edge of the salami, use the cling wrap to gently lift and roll the salami away from you, pulling the roll tightly as you go. Be firm but careful to keep the filling in place and the salami from tearing. The cling wrap will help you maintain control and create a nice, even roll. Refrigerate: Once the salami has been rolled into a log, wrap it tightly in the cling wrap and place it in the refrigerator for about 20 minutes. Chilling the roll helps it firm up, making it easier to slice and ensuring the flavours meld together nicely. Slice and Serve: After the roll has chilled, remove it from the fridge and unwrap the cling wrap. Using a sharp knife, slice the roll into approximately 12 even slices. Each slice should hold its shape and display the layers of salami, cream cheese, tapenade, lemon zest, and parsley. If you are not ready to serve, then place your salami slices in an airtight container in the fridge until you are ready to serve. Top with Crackers: Finally, place each slice onto a rice or gourmet cracker for a crunchy base. These crackers provide a perfect contrast to the soft filling, adding texture & crunch to each bite. Having a cracker for the base makes it a canape by definition.
