Keep the sheets covered with a damp cloth as you work to prevent them from drying out.Salted Butter:Adds a hint of saltiness and richness to the pastry layers. Melted and brushed between each filo layer, it creates a golden, flaky finish. Substitute with clarified butter or even olive oil if you prefer a different flavour profile.Blue Cheese:Use a creamy, robust blue cheese like Gorgonzola, Roquefort, or Stilton for a rich, bold flavour. For a milder flavour, try a Danish blue or Cambozola (a blend of blue cheese and brie). I have used a smooth Blue from Aldi.Walnuts:Adds a crunchy texture and nutty flavour that balances the creaminess of the blue cheese. Toasting the walnuts briefly enhances their flavour. Substitute with pecans or hazelnuts if you want a different flavour.Cranberry Sauce:Adds sweetness and a touch of acidity to balance the rich, savoury cheese. Homemade cranberry sauce with a hint of orange zest or cinnamon can elevate the flavours even further. For variations, try fig jam, red currant jelly, or even a drizzle of honey for a different sweet contrast.Water:I have used a little water, not for the filo but for the cranberry sauce, to loosen it up in order to drizzle.Rosemary: Rosemary works really well with blue cheese and cranberry. You could substitute with thyme. Not only does it add a contrast in colour but the addition of herbs can tie all the flavours together, adding a little depth.Instructions:Preheat the Oven: Set your oven to 200°C (180°C if using a fan-forced oven). While it heats up, prepare the ingredients and line a baking tray with parchment paper to prevent the pastry from sticking. Melt the Butter: Place the butter in a small, microwave-safe bowl and heat in the microwave until fully melted. Start with short intervals, around 30 seconds at a time, to avoid overheating. Set aside once melted. Prepare the Filo Pastry: Take one sheet of filo pastry and lay it flat on a clean surface. Using a pastry brush, apply a generous layer of melted butter on half of the sheet, ensuring even coverage. The butter will help the pastry turn golden and flaky as it bakes. Fold the Pastry: Fold the buttered pastry sheet in half lengthwise to create a long, narrow strip. Then fold the length of the pastry four to five times to create a thinner strip. Place the tray in the preheated oven and bake for approximately 20 minutes, or until the swirls are crisp and golden brown. Keep an eye on them, as filo pastry can brown quickly. Cool the Pastry Swirls: Remove the tray from the oven and let the swirls cool for a few minutes. This will allow them to firm up slightly, making them easier to handle.
