Yet, over the years, I’ve discovered that watermelon holds a special place in many hearts (and summer spreads). I was determined to produce a party appetiser that would appeal to melon enthusiasts and even win over sceptics like myself. I wanted to create a fresh summer hors d’oeuvre that balances the melon’s natural sweetness with savoury, tangy, and herbaceous notes but doesn’t have an overwhelming melon flavour. This twist on a classic Caprese salad swaps out the usual tomatoes for juicy balls of watermelon, pawpaw, and honeydew melon, paired with creamy bocconcini. To elevate the dish further, I’ve added a herbed goat’s cheese dipping sauce. The result? A refreshing bite that’s light, flavourful, and perfect for warm-weather entertaining. And yes, even I have to admit—it’s delicious. Why It Works: The crisp, juicy watermelon pairs beautifully with the creaminess of fresh mozzarella, while the basil ties everything together with its aromatic freshness. The addition of pawpaw and honeydew adds layers of fruity complexity, enhancing the overall flavour profile. While a balsamic glaze is a common addition to Caprese salads, I’ve opted to leave it out here to let the natural flavours of the fruit and cheese shine through. Drizzle thoughtfully: If you decide to use balsamic glaze, opt for a high-quality reduction with a tangy depth that won’t overwhelm the dish. Garnish generously: Fresh basil leaves are a must, but don’t skip a sprinkle of flaky sea salt and cracked black pepper for added flavour and texture. It’s a perfect example of how a few simple, high-quality ingredients can come together to create something greater than the sum of their parts. Watermelon Caprese Salad (Serves 12 Prep 30 Mins) You Will Need: Goat Cheese Use soft, creamy goat cheese for its tangy flavour and smooth texture. I have used plain goat cheese for this recipe as we are adding fresh herbs. Greek Yoghurt Opt for plain, full-fat Greek yoghurt for its creamy consistency and subtle tanginess. Avoid flavoured varieties to maintain the dish’s savoury balance. Greek yoghurt lightens the cheese sauce but careful not to make it too runny. Bocconcini These small, fresh mozzarella balls have a mild, milky flavour and soft, moist texture. Use cherry-sized bocconcini for easy assembly. If unavailable, cut larger mozzarella into bite-sized pieces but aesthetically, the balls look nicer. Flat-Leaf Parsley Known for its fresh, slightly peppery flavour, flat-leaf parsley adds brightness to the herbed goat cheese. Use freshly picked parsley for the best flavour. Dill Fresh dill lends a delicate, grassy, and slightly tangy flavour that complements the goat cheese and fruit. Garlic Cloves Fresh garlic adds a pungent and aromatic kick. Garlic Olive Oil This infused olive oil brings a subtle garlic flavour & depth of flavour to the dish without the need for additional cooking. If unavailable, substitute with plain olive oil and a hint of garlic powder. Basil Leaves Fresh basil leaves add a fragrant, sweet, and slightly peppery note to the assembled salad. Use small, tender leaves for garnish, or tear larger ones into pieces. Watermelon Select a ripe, seedless (optional) watermelon for its juicy sweetness and vibrant red colour. Use a melon baller for evenly shaped spheres. Honeydew This pale green melon offers a mild, sweet flavour and smooth texture. Ensure it’s ripe for maximum sweetness, and again use a melon baller for consistency. Pawpaw (Papaya) Choose a ripe but firm pawpaw either red or yellow. It should have some give when you push on it. Scoop out the seeds before forming small balls or chunks. Prosciutto Thinly sliced, dry-cured Italian ham adds a salty, savoury contrast to the sweetness of the fruits. Look for good quality prosciutto. Instructions 1. Prepare the Herbed Goat Cheese Mixture In a small food processor, add the following ingredients: Goat cheese Greek yoghurt Flat-leaf parsley Fresh dill Garlic Garlic-infused olive oil Blend the mixture until it becomes smooth and creamy, scraping down the sides of the bowl as needed. Transfer the mixture to a bowl, cover, and refrigerate until you are ready to assemble the dish. 2. Prepare the Fruit and Bocconcini Halve the melons (watermelon and honeydew) and the pawpaw. Remove any seeds with a spoon. Use a melon baller to scoop out small, spheres from each fruit. Aim for 1–2 melon balls of each fruit per serving glass, depending on the size of your glasses. For the bocconcini, drain any excess liquid and pat them dry with a paper towel. 3. Shape the Prosciutto Roses Take each slice of prosciutto and fold it in half lengthwise to create a long strip. Starting from one end, roll the folded strip tightly to form a rose shape. Repeat this process for each serving glass. If needed, adjust the layers to give the “rose” a fuller appearance. 4. Assemble the Dish Begin assembling by adding a generous spoonful of the herbed goat cheese mixture into the base of each serving glass. Use the back of the spoon to spread it into an even layer. Next, arrange one ball each of watermelon, honeydew, pawpaw, and bocconcini on top of the goat cheese. Position them so that the different colours and textures are evenly distributed for an attractive presentation. Place a prosciutto rose on top of the fruit and cheese layer. Tuck a few fresh basil leaves around the prosciutto for added colour and aroma. 5. Finishing Touches Just before serving, drizzle a small amount of olive oil over the top of each assembled salad for a glossy finish and a little extra flavour. Finely chop a little extra dill and sprinkle over top. Serve & Enjoy! You could potentially substitute with Kiwifruit balls & cherry tomatoes with a splash of balsamic, or your creamy dip could be a basil pesto. An alternative dipping sauce for this summer melon appetiser could be a creamy, garlicky tzatziki. Your dipping sauce can be made ahead of time but assembly needs to be at time of service to ensure freshness. Blend until smooth and creamy. Halve the melons and pawpaw, then use a melon baller to scoop out 1–2 balls of each per glass, depending on the size of your serving glasses. Fold each slice of prosciutto in half lengthwise and roll it into a rose shape. To assemble, spoon an even layer of herbed goat cheese into the base of each serving glass. Add one ball each of watermelon, honeydew, pawpaw, and bocconcini. Top with a prosciutto rose and a few fresh basil leaves. Finish with a light drizzle of olive oil over each salad before serving.
