While I do love a classic, and I’m particularly partial to a chocolate Pavlova (along with the rest of my household), these mini meringue kisses have become one of my go-to mini dessert ideas for parties.Foolproof, and DeliciousThey’re a fantastic way to serve a bite-sized dessert that’s not only delicious but practically foolproof.You don’t even need to make them from scratch—most supermarkets stock ready-made mini pavlovas (or meringue kisses) that are perfect for those moments when time is tight.Easy to CustomiseI love to switch things up by dipping a few of them in melted chocolate and adding a flavoured cream filling instead of the traditional cream & fruit on top.The crispy meringue paired with rich chocolate is such a satisfying combination. Plus, it gives you a mix of textures in one tiny bite.What I love most about these mini pavlovas is that the presentation options are endless. This dessert appetiser can easily be adapted with different flavours and colour combinations to suit any theme or occasion.One option might be lemon curd and blueberries for something fresh and zesty, or you could go with passion fruit whipped cream for a tropical vibe.You could even experiment with edible flowers for a little more elegance. You can purchase bite-sized meringues or meringue kisses in a box of approx 24. If you prefer homemade, simply whip egg whites with sugar until stiff peaks form, pipe small rounds onto a baking sheet, and bake at a low temperature until dry and crisp. You don’t want overwhelming sweetness but just a mouthful.Dark Chocolate MeltsChoose quality dark chocolate melts or chips with around 60-70% cocoa. These are ideal for melting and dipping since they have a rich, bittersweet flavour that works perfectly with the meringue’s sweetness and balances out the berries. Alternatively, you can use a dark chocolate bar and chop it into small pieces for melting.Thickened CreamThis is the type of cream that’s ideal for whipping, often labeled as “whipping cream” or “heavy cream” with at least 35% milk fat. When whipped, it holds a soft, fluffy texture that pairs perfectly with the lightness of meringue. Make sure to chill the cream before whipping to help it thicken nicely.Icing SugarIcing sugar, also known as powdered or confectioners’ sugar, is finely ground and dissolves quickly, making it perfect for sweetening whipped cream without leaving any gritty texture. It’s also great for a light dusting on top for aesthetics, so make sure you have a little extra. There is something about a dessert that has been dusted with icing sugar- it looks more inviting.RaspberriesFresh raspberries add a juicy, tart contrast to the sweetness of the meringue and chocolate. Look for firm, plump raspberries with vibrant red colour, and gently mash them with a fork before adding to the cream for a burst of natural sweetness and colour.Freeze-Dried RaspberriesThese are raspberries that have had all the moisture removed, resulting in a crispy, intensely flavoured powder. Freeze-dried raspberries add a tart pop of flavour and & colour when sprinkled on desserts. They’re typically found in the dried fruit or baking aisle. You can crush them slightly for a finer dusting or use them whole for a stronger flavour.Instructions:Melt the Chocolate: Place your chocolate melts in a microwave-safe bowl. Microwave in 30-second intervals, stirring well after each burst. Continue heating and stirring until the chocolate is completely melted and smooth. This method ensures the chocolate doesn’t overheat and remains glossy. Dip the Meringues: Hold each meringue kiss by its pointed end and dip the flat base into the melted chocolate. Allow any excess chocolate to drip back into the bowl, then place each dipped meringue on a tray lined with baking paper to set. This gives the meringues a nice chocolate layer on the base. Whip the Cream: Pour the cream into a medium-sized bowl. Using a hand or stand mixer, whip the cream on medium-high speed until stiff peaks form, about 3-5 minutes. You’ll know it’s ready when the cream holds its shape on the beaters without collapsing. Take care not to over-whip, as this can cause the cream to turn to butter. Mash the Raspberries: In a small bowl, add the fresh raspberries and use a fork to gently mash them. Leave some small chunks for added texture. The juices from the raspberries will blend beautifully with the cream, adding colour to the cream. Combine Cream and Raspberries: Fold the mashed raspberries into the whipped cream, gently stirring until they are evenly distributed. The mixture should have a soft pink hue with small bits of raspberries throughout. Be careful not to over-mix, as you want to retain some texture from the raspberries. Assemble the Meringue Kisses: Take one meringue kiss and, using a small spoon, place a teaspoon of the raspberry cream mixture onto its flat side. Gently press a second meringue kiss on top, creating a sandwich with the cream mixture in the centre. The cream should slightly ooze out the sides but not overly spill. Repeat the Process: Arrange each filled meringue on a serving plate. Repeat the process with the remaining meringues until all are filled. You’ll end up with beautiful meringue sandwiches that have a colourful, creamy centre. Garnish with Freeze-Dried Raspberry: Place the freeze-dried raspberries in a mortar and gently grind them with a pestle until they’re a semi-fine powder. This adds more colour and an extra burst of raspberry. Lightly sprinkle the raspberry powder around the cream filling of each meringue kiss. Dust: Finally, dust the top of the meringue kisses with icing sugar to give them a delicate, snowy look. Dip the flat side of each meringue kiss in the melted chocolate, then place on a tray lined with baking paper. In a medium bowl, whip the cream until stiff peaks form. In a small bowl, roughly mash the raspberries with a fork, leaving a bit of texture. Fold the mashed raspberries into the whipped cream and stir until combined. Take one meringue kiss, spoon a teaspoon of the raspberry cream onto its flat side, and gently press a second meringue kiss on top. Arrange the filled meringues on a serving plate and repeat with the remaining kisses. Lightly crush the freeze-dried raspberries in a mortar and sprinkle over the cream filling.
